How baklava is made

The tray is cut into diamonds before baking, then hot syrup is poured over it straight from the oven and it is finished with ground pistachio. Every step takes time and a steady hand.

Every tray is made by hand: paper-thin pastry, freshly ground Antep pistachios, a blend of butter and vegetable oil and house-made syrup, baked fresh every day.

How our baklava is made

From paper-thin pastry to the finished tray: a look inside our bakery, step by step and by hand.

Pastry
  1. Step 1 of 8

    Pastry

We work with paper-thin pastry and lay every sheet by hand.

  2. Step 2 of 8

    Layers

Sheet by sheet the pastry goes into the tray, with a generous layer of ground pistachios in between.

  3. Step 3 of 8

    Cutting

Before baking, we cut the tray into even pieces with a knife.

  4. Step 4 of 8

    Butter and oil

A warm blend of butter and vegetable oil soaks into every layer.

  5. Step 5 of 8

    Baking

In the oven the baklava turns golden and crisp.

  6. Step 6 of 8

    Syrup

Straight from the oven, the hot trays get a pour of our house-made syrup.

  7. Step 7 of 8

    Pistachios

Finally, we scatter ground Antep pistachios over each tray by hand.

  8. Step 8 of 8

    Resting and packing

The trays rest until the syrup has soaked in, then go into the box as a whole tray of 2.2 to 2.4 kg. Unopened in the fridge, the baklava stays fresh for up to a month.
